NEW EATERY, BAKERY AND CATERING VENUE OPENS AT 100 OAKS MALL

Nashville, Tenn. (August 25, 2004) – Cookie's Kitchen restaurant, bakery and catering service opens its first location at 100 Oaks Mall. The restaurant will celebrate its grand opening at the mall's food court on Wednesday, September 1, 2004.

"We are thrilled to welcome such a multi-faceted operation to our existing lineup of stores and eateries," said Andrew J. Groveman, senior vice president of Belz, owner and developer of 100 Oaks Mall. "The new restaurant will enhance the selection of dining options and services available at the mall for our customers to enjoy."

Cookie's Kitchen serves customers only the highest quality natural and organic ingredients and offers a variety of sandwiches, salads, pizza and international desserts. Its specialties feature cookies and baked goods, including brandy snaps, feathered tuiles (French for "tiles"), Norwegian butter cookies, Pastel de Tres Leches, strawberry indulgence cake and Indian curry biscuits. Visitors can stop by Cookie's Kitchen and also enjoy natural meats and fresh vegetable dishes, boxed lunches and other side items.

In addition, Cookie's Kitchen offers delivery and caters to customers' needs with custom-made menus for corporate functions and other events. It also bakes made-to-order cakes for any occasion.

"We are not limited by our menu, and this makes us unique. I work with a client to create a menu that fits his/her personality, tastes and needs, instead of the one-diet approach," said Frances "Cookie" Walls, owner and manager of Cookie's Kitchen, Inc. "Our goal is to positively influence customers' lifestyles by making them feel good about what they eat." Previously in the public health industry, Cookie Walls began baking cookies in her kitchen over a year and a half ago as a "lucrative" hobby. She shortly realized that she could make her hobby into a new career and began her own catering business. By starting off small and making strategic, well-calculated business decisions, Walls built a successful catering business that has served the Nashville area for the past six months. Her secret: she works with her customers to meet their needs.
